We are seeking a driven, passionate Line Cook to join our lunch team—someone ready to grow, learn, and contribute to a high-performance kitchen.
The OpportunityThis is an ideal role for a developing cook (3–5 years experience) looking to:
- Work with premium local ingredients (Organic Ocean seafood, Two Rivers meats, foraged products)
- Execute a refined, ingredient-driven menu rooted in Northern Italian tradition
- Develop under strong culinary leadership in a structured, standards-driven kitchen

Lunch Service OverviewYou will be working a focused, high-execution menu including:
- Handmade pastas (rigatoni ragù, squid ink bigoli, cjarsons, gnocchi)
- Refined antipasti (burrata ripiena, frico friulano, anchovy bruschetta)
- Composed secondi (ossobuco, lamb chops, wild salmon, lingcod)
- Seasonal, local, and foraged ingredients executed with precision
This is a fast-paced but controlled service environment—quality, consistency, and timing are everything.
What We’re Looking For- 3–5 years experience in a professional kitchen

- Strong fundamentals: knife skills, station organization, cleanliness
- Ability to work clean, fast, and with intent

What You’ll Do- Execute dishes to exacting Carlino standards
- Maintain a clean, organized, and disciplined station
- Support mise en place and prep for service
- Communicate clearly with sous chefs and expo
- Contribute to a positive, professional kitchen culture
Compensation & Perks- $22+/hour + tip pool (based on experience)
